Sweet Potato Leek Soup
Ingredients
2 tbsp extra virgin olive oil
2 leeks chopped thinly
½ cup onion, diced
1 cup mushrooms chopped (optional) ** 1 cup of any vegetable or mixture of vegetables can be substituted**
1 sweet potato, peeled and diced
1 can (14 oz) coconut milk
2 cups broth (vegetable, chicken or beef) (homemade or premade) Low sodium or sodium free
¼ tsp black pepper
2 tbsp fresh green onions, finely chopped (optional)
If your can of coconut milk is less than 14oz, use additional broth
Directions:
Put all ingredients in a crockpot and cook on low for 4-5 hrs until all vegetables are cooked.
Serving size: 1 cup
